Chocolate Peppermint Energy Balls
These tasty little snacks are perfect for a quick burst of energy while your sitting on the lift in between runs.

[li]1 cup dates[/li]
[li]1 cup pecans[/li]
[li]1/4 cup raw cacoa powder[/li]
[li]1/4 cup unsweetened coconut[/li]
[li]1/8 tsp peppermint essence[/li]
[li]1-2 tbsp honey[/li]
Place first 4 ingredients into a food processor for 1-2 minutes or until mixture resembles bread crumbs. Add peppermint essence and 1 tbsp honey, process for another 30 seconds. Taste mixture and add more honey if needed. Scoop a small amount of mixture (about 1 tbsp) and roll it into a ball between your hands, continue until all the mixture has been made into small balls. Roll in coconut, cocoa or chopped nuts or simply leave plain. Place in the fridge to let ‘set’ for 1-2 hours (you can eat them before that, but the longer they are in the fridge to firmer they become). Pack some in a zip-lock bag and take on your next adventure.
